From the same legendary Finca San Francisco showcases one of coffee's most celebrated varietals Geisha through one of its most ambitious processing methods. Cherries are sorted by ripeness, anaerobically fermented in cherry, carefully pulped, and then dried using the Sleeping Bag technique with controlled humidity. A process that demands precision and rewards patience.
The result is a cup of extraordinary aromatic complexity and sweetness, the kind of coffee that stops you mid-sip. Almond and fresh strawberry open the nose, giving way to bright kiwi acidity through the body. Yellow peach and honey dominate the palate, with a clean, lingering finish of white grape that speaks to the Geisha's remarkable clarity. Creamy body, medium-high acidity, exceptional length.
